The Second Ladies Summer Initiative
Bake Sales across the country to end childhood hunger

What: A Bake Sale to support Share Our Strength’s Great American Bake Sale. The funds you raise at your bake sales will go to organizations in communities across America that provide low income children with nutritious meals when they’re needed most—during the summer and after-school. Your support helps Share Our Strength’s efforts to make sure that no child in America grows up hungry, a priority articulated by the First Lady. 

When: Any day this summer!  You choose!

How: Get your friends (and kids!) together and PICK A DATE – Pick a few fun recipes (check out the recipes below for some cool ideas) – Divide up your grocery list – Buy ingredients – Bake away – Spread the word about your bake sale using email, flyers the Second Ladies Connect Board and the Second Ladies Twitter Feed - Set up a table – Spread out your wares – If it’s hot, add a pitcher of lemonade to the menu – Sell your treats – Contribute the proceeds to Share Our Strength (see below).

Where: At your house, at the beach, at your kids’ camp, at a place of worship, in front of a library, at a community center, on your stoop… You get the idea!!

SUGGESTED RECIPES FROM MICHELLE OBAMA AND FRIENDS

Michelle's Shortbread Cookies

These cookies were served to guests at the two Ritz Carlton Hotels in the D.C. area during inaugural festivities. Michelle submitted this recipe to Family Circle's cookie baking contest for the wives of presidential candidates. The will sell like hotcakes!!  LOL!!

Makes 6 dozen 2-inch x 3-inch cookies

Ingredients

      1-1/2  cups (3 sticks) unsalted butter, softened

      1-1/2  cups plus 2 tablespoons sugar

      2  egg yolks

      2  tablespoons Amaretto (almond liqueur)

      1  teaspoon each orange and lemon zest

      3  cups cake flour (not self-rising)

      1/4  teaspoon salt

      1  beaten egg white

        Chopped nuts or dried fruit (optional)

       

Directions

1. Heat oven to 325°F.

2. Line a 17 x 12 x 1-inch baking pan with nonstick foi

3. In large bowl, cream together butter and 1-1/2 cups of the sugar

4. Slowly add egg yolks, and beat well until smooth

5. Beat in Amaretto and zest

6. Stir in flour and salt until combined

7. Spread dough evenly into prepared pan flattening as smoothly as possible

8. Brush top of dough with egg white

9. Sprinkle with nuts or fruit (if using) and with remaining 2 tablespoons sugar

9. Bake at 325°F for 25 minutes or until brown, turn off oven and allow cookies to sit in oven (with door ajar) for 15 minutes. Cut while slightly warm.

 

Biden's Favorite Oatmeal Raisin Cookies

Ingredients

      1 cup butter

     1 cup firmly packed brown sugar

     1/2 cup granulated sugar

     2 eggs

     1 – ½ teaspoon vanilla

     1-1/2 cups all-purpose flour

     1 teaspoon baking soda

     1 teaspoon cinnamon

     1/2 teaspoon salt

     3 cups old fashioned oats

     1 cup raisins

     ½ cup chopped walnuts or pecans (optional)

    

Directions

  1. Heat oven to 350 degrees.
  2. 2. Sift flour, soda, cinnamon and salt together.
  3. 3. Beat together the butter and sugars until creamy.
  4. Add eggs and vanilla
  5. beat well.
  6. Add flour mixture, oats and raisins and mix well.
  7. Use tablespoon and drop onto ungreased cookie sheet.
  8. Bake 10-12 minutes. 

Cookies should be golden brown in color when done.

 

 

Hilary’s Chocolate Chip Cookies

Ingredients

            1 1/2 cups all-purpose flour

            1 teaspoon salt

            1 teaspoon baking soda

            1 cup shortening

            1 cup packed brown sugar

            1/2 cup white sugar

            1 teaspoon vanilla extract

            2 eggs

            2 cups rolled oats

            2 cups semisweet chocolate chips

 

Directions

1. Preheat oven to 350 degrees F (180 degrees C).

2. Brush baking sheets lightly with vegetable oil

3. Combine flour, salt and baking soda on waxed paper

4. Beat together shortening, sugars and vanilla in large bowl with electric mixer until creamy

5. Add eggs and beat until light and fluffy

6. Gradually beat in flour mixture

7. Stir in rolled oats and then chocolate chips

8. Drop batter by rounded teaspoonsfuls onto baking sheets

9. Bake for 8-10 minutes or till golden

10. Cool cookies on sheets for 2 minutes

11. Remove to wire racks to cool completely.

 

Barack’s Favorite Peach Cobbler

One of Barack’s favorite dessert’s in Chicago!!

Servings: 10



Ingredients (FILLING)

15 cups frozen peaches (about seven 10-ounce bags), thawed and drained


1-1/2 cups granulated sugar


1/4 cup packed brown sugar

3 tablespoons all-purpose flour

1/2 rounded teaspoon cinnamon


1/2 teaspoon nutmeg


3/4 cup peach juice (the juice drained from the frozen peaches is fine)


1/4 cup (1/2 stick) butter, cut into small pieces



Ingredients (CRUST)

2 cups all-purpose flour


1 teaspoon salt


2/3 cup Crisco shortening


1/4 cup (1/2 stick) butter, cut into small pieces


1/3 to 1/2 cup ice water



Directions

1. Heat the oven to 375 degrees F

2. Lightly coat a 9-by-13-inch baking pan with cooking spray

3. To make the filling, arrange the peaches in an even layer in the prepared baking pan. Set aside.

4. In a large bowl, whisk together the granulated sugar, brown sugar, flour, cinnamon and nutmeg

5. Whisk in the peach juice until smooth

6. Pour the mixture over the peaches.

7. Sprinkle the butter over the top. Set aside.

8. To make crust, in a medium bowl, whisk together the flour and salt.

9. Add the shortening and butter

10. Then use a pastry blender or gloved hands to work them into the dry ingredients until the mixture forms pea-sized lumps.

11. Slowly add the water, adding enough and mixing only until the dough holds together. Do not overmix.

12. Place the dough between 2 sheets of parchment paper

13. Roll out the dough into a rectangle slightly large than the baking pan and about 1/4 inch thick.

14. Remove the top sheet of parchment paper. The dough then can be cut into strips and woven into a crust over the cobbler.

15. For an easier crust, invert the crust onto the baking pan and carefully peel off the parchment paper. Trim the crust to fit just inside the edge of the pan.

16. Bake for 50 minutes to 1 hour, or until the crust is golden brown

17. Let stand 10 minutes before serving.
